Adjusting

It's been difficult adjusting to a grain free diet. Lunch time has become a daily ordeal. Dinner has become a lot more time consuming. This is a meal that we have become dependant on... Chicken breast, potato green bean salad, and zucchini carrot slaw. Details to come on those recipes. This biggest challenge with these new dietary guideline is having mom and dad on the same page. We are working that out also.

Creamy Noodles with Chicken and Spinach

Today was a swing and a miss with being gluten/dairy free, but it was pretty wholesome, contained greens, devoured by all 3 kids, and not McDonalds... So I am counting it as a win.

*3 tbsp evoo
*1 small onion diced
*1/2 pkg (5oz) frozen spinach, thawed, chopped, and excess water removed
*1/4 c whole wheat flour
*4 c milk
*1 tbsp wooster sauce
*salt and pepper
*2 tbsp dry dill weed
*2 cans chicken in water, drained
*8oz macaroni, cooked
*1/4 c grated parmesan

1. preheat oven to 375*. In pot, cook onions in oil until soft, add spinach and cook 2-3 min more. Add flour and cook and stir for about a minute to make roux. Add milk, stir constantly until thickens and bubbles. Stir in dill, salt and pepper, wooster, chicken.

2. Add drained, cooked macaroni to sauce, stir till combined. Pour entire mixture into greased 9x13 glass dish. Sprinkle cheese on top. Bake 10-12 minutes.

2 of the 3 kids devoured this and asked for seconds. I was surprised since we are not a big spinach family. The third ate her plate after a bit of convincing... Their biggest complaint was the parmesan cheese on top (go figure), so I would probably omit it next time for the sake of calorie saving.

Chicken and Rice

*1-2 c cooked rice
*2 lbs chicken cutlets
*2 c walnuts
*2 c dried cranberries
*5-6 ribs celery chopped
*2 tbsp evoo
*salt and pepper
*1/2-1 c citrus vinagrette

1. put evoo in bottom of slow cooker with chicken, season with salt and pepper. add walnuts, cranberries, celery, and dressing. cook low 5-6 hours or high 3-4 hours.
2. shred chicken and mix all into cooked rice. looks weird, tastes great!

meatballs

*2 lbs hamburger
*1 tbsp wooster sauce
*1 pkg onion soup mix
*1/2 c rolled oats, blended
*1 egg

directions

1. mix everything together in a big bowl till very well mixed
2. roll meat into small balls and cook in ungreased pan over medium heat. cook 4-5 minutes on each side till done through...

options...

freezer
these are great as a freezer meal. after rolling, freeze on a metal cookie sheet, place in freezer bag. when ready to serve, just pull them out and put in frivolity on low heat for 6-8 hours

slow cooker
brown on all sides, but don't cook through. Place balls into slow cooker and cook on low 3-6 hours.

Serve meatballs over rice.

new potato and green bean salad

threw this together tonight and was very happy with how it turned out!

*1 1/2 lb small new potatoes
*1 lb green beans, trimmed
*evoo
*s&p
*dash sugar
*mccormick garlic pepper grinder stuff

directions

1. boil potatoes in a large pot with a dash of salt and sugar. about 20 minutes or until soft through. add grean beans last 5 min or so.
2. drain and quickly rinse in cold water. drizzle some evoo over potatoes and beans, stir thoroughly. salt, pepper, and garlic to taste.

chicken in mushroom sauce

there is a name for this type of dish... i just can't think of what it is... delicious, let's stick with that.

*1 chicken breast per person
*8 oz sliced mushrooms
*1/2 small onion, diced
*evoo
*3 tbsp brown mustard
*1 tbsp lemon juice
*1-2 tsp marjoram
*2 cloves garlic

directions

1. brown chicken breasts in evoo. continue cooking until almost done. take out of pan and set aside.
2. add onions, and mushrooms to pan, cook till soft and browned, 5-7 min. add garlic, marjoram, s&p to taste.
3. add a pinch more evoo, mustard, and lemon juice. cook till liquid reduced by 1/2. add chicken back into pan and cook till done.

Tonight served with potato and green bean salad and steamed broccoli (the kids all time favorite).
