bolognese sauce

*1 large yellow onion
*1 peeled carrot
*1 celery stalk
*2-3 large cans tomatoes-garlic and onion seasoned
*6 oz tomato paste
*2 tablespoons unsalted butter
*2 tablespoons olive oil
*1 1/2 cans beef broth
*3 thin slices panchetta (or bacon crumbles)
*big pinch nutmeg
*5 sage leaves
*1/3 c. heavy cream
*1 bay leaf
*salt and pepper
*1 lb ground hamburger
*1/2 lb ground pork

1. finely dice onion, carrot, and celery. saute the veggies in butter and oil over medium-high heat till golden, about 8-10 minutes. Remove 1/2 to 3/4 of the sauted veggies and hold for later. add meat and season with salt, pepper, and nutmeg. raise heat to high till meat is lightly browned.

2. add broth and cook until total liquid is reduced 50%. meanwhile, blend removed veggies, 2 cans of tomatoes, tomato paste and a pinch of sugar till smooth. add blended mixture and 3rd can of tomatoes to meat mixture.

3. add sage and bay leaves, reduce the heat to low, and simmer about 90 minutes. skim surface of extra fat and stir in cream. adjust seasonings.
