curry

*2 medium onions, chopped
*1-2 cloves garlic, chopped
*fresh shredded ginger
*1 tablespoon flour
*1-2 tablespoons curry powder
*1 large tomato
*1-1 1/2 lb beef chuck roast
*2 c beef stock
*5-6 potatoes, chopped
*1/4 c oil
*salt, to taste
*chopped tomato, green pepper, onion, and cilantro for serving
*hot cooked rice

1. saute onions, garlic, and ginger in oil. mix flour and curry together in a bag. cut beef into bite-sized pieces and shake in bag till well coated in flour mixture.

2. add beef into onion mixture and cook till brown, stirring continuously. add beef stock and cubed potatoes. remove skin from tomato by blanching and place on top of all. simmer until meat is tender.

3. mix "sambals" together by adding chopped tomato, green pepper, and onion. mix with fresh cilantro. serve everything over rice.

company casserole

*1 lb hamburger
*1 tablespoon butter
*1 (16oz) can diced tomatoes
*8oz egg noodles
*8oz cottage cheese
*8oz cream cheese
*1/4 c. sour cream
*1/3 c. sliced green onions
*1 tablespoon chopped green peppers
*2 tablespoons melted butter

1. preheat oven to 350*. brown beef in 1 tablespoon butter; drain excess grease. stir in tomatoes; remove from heat.

2. boil noodles in salted water for 10 minutes, or till tender; drain.

3. combine cottage cheese, cream cheese, sour cream, onions, and green peppers.

4. in a buttered 2-qt casserole dish, spread 1/2 of the noodles into bottom of dish. cover with cheese mixture then top with the remaining noodles. spoon burger sauce over top, pressing down with the back of a spoon.

5. bake covered 20-30 minutes. let set for 10 minutes before serving.

sweet and sour meatballs

*hot cooked rice
*1lb lean ground beef
*1 egg, slightly beaten
*salt and pepper
*1/3 c. milk
*1/3 c. chopped onion or 1/2 pkg onion soup mix
*1 teaspoon worchester sauce
*1/2 c. rolled oats
sauce:
*1/2 c. brown sugar
*1 teaspoon mustard
*1 teaspoon worchester sauce
*1/4 c. vinegar
*1/4 c. bbq sauce

1. preheat oven to 350*. in a large bowl combine beef, egg, salt and pepper, milk, onion, worchester sauce, and oats. mix well and form into 1-2 inch balls. place in a casserole dish in a single layer.

2. wisk all sauce ingredients together and pour over meatballs.

3. bake 30 minutes till cooked through. serve over rice.

gone all day dinner

*1 c. uncooked wild rice, rinsed and drained
*1 c. celery, chopped
*1 c. carrots, chopped
*2 (4oz) cans sliced mushrooms
*1 large onion, chopped
*1/2 c. slivered almonds
*3 beef bouillon cubes
*2 1/2 teaspoons season salt
*2 lbs boneless round steak, cut into bite-sized pieces
*3 c. water

1. layer everything in order into a 5-6 qt slow cooker; do not stir.

2. cover and cook 6-8 hours. stir before serving.

beef stroganoff

*2 1/2 tablespoons unsalted butter, divided
*1 c. beef broth
*salt and pepper
*1/2 c. thinly sliced green onions
*3 tablespoons sour cream
*2 tablespoons fresh dill
*1 tablespoon flour
*1 lb steak, sliced 1/4" thick strips
*2 tablespoons olive oil
*3/4 lb mushrooms, sliced
*1 teaspoon djon mustard
*egg noodles, cooked al dente

1. melt 1 1/2 tablespoon butter in a 1-qt heavy saucepan. wisk in flour and cook, while wisking, for 2 minutes to make a roux. wisk in beef broth and bring to a boil. reduce heat and simmer, wisking occasionally, for 3 minutes. remove from heat, cover, and set aside.

2. season beef with salt and pepper. heat 1 tablespoon butter and 1 tablespoon olive oil in a 12 inch skillet pan. add beef and brown on both sides but leave pink on the inside. remove beef to a plate and set aside.

3. heat remaining butter and oil, add onions and mushrooms and cook till soft, about 3-4 minutes. return beef.

4. reheat sauce, and wisk in sour cream, mustard, dill, and a pinch of salt and pepper. combine beef and sauce mixtures, stir, and serve over egg noodles.
